Vella Kozhukkattai (Sweet Modak) Recipe

  • raw rice flour0.75 cup
  • water1.13 cup
  • salt0.25 tsp
  • ghee1 tsp
  • fresh coconut0.25 cup
  • jaggery0.25 cup

Method

    Heat 1 teaspoon of ghee in a pan over medium heat.

    Add the grated coconut and jaggery.

  3. 3

    Cook, stirring continuously, for 8–10 minutes until the jaggery melts and the mixture thickens.

    Add the cardamom powder and mix well.

  5. 5

    Remove from the heat and allow the filling to cool completely.

    Divide the filling into small equal-sized balls and keep aside.

    Bring 1 cup of water and the salt to a rolling boil.

    Remove the pan from the heat.

    Gradually add the rice flour while stirring continuously to prevent lumps.

    Mix until a soft dough forms. Add a few drops of extra hot water if required.

    Add 1 teaspoon of ghee and knead gently while the dough is still warm until smooth.

    Cover the dough with a damp cloth to prevent it from drying.

    Grease your palms lightly with ghee.

    Divide the dough into 12–15 equal portions.

    Roll each portion into a smooth ball.

    Flatten each ball into a small cup using your fingers, keeping the centre slightly thicker.

    Place one portion of the coconut filling in the centre.

    Bring the edges together and seal well.

    Roll gently into a smooth ball or shape into the traditional modak with a pointed top.

    Grease a steamer plate lightly with ghee.

    Arrange the kozhukkattais, leaving a little space between each one.

    Steam for 10–15 minutes, or until the outer layer becomes glossy and cooked.

    Remove from the steamer and allow to cool slightly before serving.

Notes & variations

Freshly grated coconut gives the best flavour and texture. Brown sugar can be substituted for jaggery if required. Keep the rice dough covered at all times to prevent it from drying out. If the dough becomes dry, sprinkle a few drops of hot water and knead again. Homemade rice flour produces the softest kozhukkattais. Best served fresh, especially during Vinayaka Chaturthi (Ganesh Chaturthi). Re-steaming softens leftovers.
