Vegetable stew

Method

Heat the coconut oil in a heavy-bottomed pan over medium heat.

Add the cardamom, cloves and cinnamon stick. Sauté for about 30 seconds until fragrant.

Add the ginger, green chillies, sliced onions and curry leaves.

Sauté until the onions become soft and translucent. Do not allow them to brown.

Add the potatoes, carrots, beans and cauliflower (if using).

Stir well and season with the salt.

Pour in the water and bring to a boil.

Cover and cook over medium heat for 12–15 minutes, or until the vegetables are tender but not mushy.

Add the thick coconut milk and stir gently.

Simmer over low heat for 2–3 minutes. Do not boil after adding the coconut milk, as it may split.

Stir in the crushed black pepper.

If using, lightly fry the cashew nuts in a little coconut oil or ghee and add them to the stew.

Remove from the heat and allow the stew to rest for 5 minutes before serving.
Notes & variations
Thin coconut milk can be used for cooking the vegetables, with thick coconut milk added at the end for a richer flavour. Add fresh green peas for extra colour and sweetness. For a vegan version, use coconut oil instead of ghee when frying the cashews. This stew pairs beautifully with appam, idiyappam, bread, chapati or Kerala parotta. Store in the refrigerator for up to 3 days and reheat gently without boiling.
