Upside-Down Apple & Cinnamon Cake

Method

    Preheat the oven to 180°C (160°C fan).

    Use a 25 cm ovenproof frying pan or a similar-sized ovenproof cake tin.

    Melt the butter in the ovenproof pan over medium-low heat.

    Stir in 125 g of the brown sugar.

    Cook gently for about 2 minutes until the sugar starts to dissolve.

    Arrange the sliced apples evenly over the sugar mixture.

    Remove the pan from the heat and set aside.

    In a large bowl, sift together:

    Plain flour

    Baking powder

    Bicarbonate of soda

    Salt

    Ground cinnamon

    In a separate bowl or measuring jug, whisk together:

    Eggs

    Remaining 125 g brown sugar

    Buttermilk

    Vegetable oil

    Pour the wet ingredients into the dry ingredients.

    Whisk gently until you have a smooth batter.

    Do not overmix.

    Carefully pour the batter over the apple layer.

    Spread evenly with a spatula.

    Bake for 30 minutes, or until:

    the cake is golden,

    springs back lightly when touched,

    and a skewer inserted into the centre comes out clean.

    Remove from the oven.

    Allow the cake to cool in the pan for 5 minutes.

    Place a serving plate upside down over the pan.

    Carefully invert the cake onto the plate in one quick movement.

    Lift off the pan carefully.

Notes & variations

Serve warm with: Softly whipped cream Vanilla ice cream Custard Crème fraîche Braeburn, Gala, Pink Lady or Granny Smith apples work well. Add 50 g chopped walnuts or pecans to the batter for extra texture. A pinch of nutmeg complements the cinnamon beautifully. If buttermilk is unavailable, mix 200 ml milk with 1 tablespoon lemon juice and leave for 10 minutes before using. Best served warm on the day it is baked, but it also pairs wonderfully with tea the following day. Room temperature: Up to 2 days. Refrigerator: Up to 5 days. Warm gently before serving for the best flavour.
