  • raw plantain1
  • elephant yam100 g
  • raw mango0.5
  • coconut1 cup
  • green chillies3
  • cumin seeds0.5 tsp
  • thick curd2 tbsp
  • coconut oil2.5 tsp
  • curry leaves
  • salt
  • turmeric powder0.5 tsp

Method

    Cut all vegetables into 2-inch batons.

  2. 2

    Grind the coconut, green chillies and cumin into a coarse paste.

  3. 3

    Cook the cucumber, ash gourd and plantain together.

  4. 4

    Add the raw mango when half cooked.

  5. 5

    Pressure cook the remaining vegetables separately with turmeric and salt for 2 whistles.

    Combine all the vegetables.

    Add the coconut paste and cook for 2–3 minutes.

    Remove from the heat.

    Stir in the curd.

  10. 10

    Finish with coconut oil and curry leaves.

Notes & variations

If using sour mango, reduce or omit the curd.
