Sweet Corn Bhajji

- homemade bajji mix1 cup
- water

Method

Using a sharp knife, slit the sweet corn into two.

In a mixing bowl, combine the Homemade Bajji Mix with enough water to make a smooth, thick batter.

Allow the batter to rest for 10 minutes.

Heat oil in a deep kadai over medium heat.

Dip each sweet corn piece into the batter, ensuring it is completely coated.

Carefully place the coated corn pieces into the hot oil.

Fry in batches until golden brown and crisp on all sides.

Remove with a slotted spoon and drain on kitchen paper.

Serve immediately while hot and crispy.
Notes & variations
Tomato ketchup Mint chutney Green chutney Garlic mayonnaise Masala tea The batter should be thick enough to coat the corn without dripping excessively. Sprinkle chaat masala over the hot bhajjis before serving for extra flavour. The same batter can be used for potato, onion, raw banana and chilli bhajjis. Best served immediately after frying.
