Method

    Preheat the oven to 180°C (350°F).

    Line baking trays with baking paper.

  3. 3

    In a large mixing bowl, beat the butter until smooth and creamy.

  4. 4

    Add the sugar and beat until light and fluffy.

  5. 5

    Beat in the egg yolks, one at a time.

  6. 6

    Add the vanilla extract and mix well.

    Sift together the plain flour and salt.

    Gradually add the flour mixture to the butter mixture and mix until a soft dough forms.

    Fill a cookie press or a piping bag fitted with a 1.5 cm (½-inch) open star nozzle with the dough.

    Pipe rosettes or stars onto the prepared baking trays, leaving approximately 5 cm (2 inches) between each cookie.

    Decorate with chopped glacé cherries, nuts, coloured sprinkles or coloured sugar, if desired.

    If the dough becomes too soft, refrigerate it for 15–20 minutes before continuing.

    Bake for 11–14 minutes, or until the edges are just beginning to turn golden.

    Allow the cookies to cool on the baking tray for 2–3 minutes.

    Transfer to a wire rack and cool completely before storing.

Notes & variations

Makes approximately 30–35 cookies. Do not overbake; the cookies should remain pale with lightly golden edges. Almond extract can be substituted for vanilla for a different flavour. Dip half of each cooled cookie in melted chocolate for a festive variation. Store in an airtight container at room temperature for up to 10 days. Freeze for up to 3 months.
