South Indian Potato Fry

- urad dal1 tsp
- chana dal1 tsp
- curry leaves1 sprig

- turmeric powder0.25 tsp
- chilli powder1 tsp
- coriander powder1 tsp
- cumin powder0.5 tsp
- asafoetida1 pinch
- salt
- fresh coriander leaves2 tbsp
Method

Wash the potatoes and boil them until just cooked. Peel and cut into medium-sized cubes.

Heat the oil in a heavy-bottomed kadai over medium heat.

Add the mustard seeds and allow them to splutter.

Add the urad dal and chana dal (if using) and fry until lightly golden.

Add the curry leaves, green chilli and asafoetida.

If using onion, add it now and sauté until translucent.

Add the turmeric powder, chilli powder, coriander powder and cumin powder. Stir for a few seconds.

Add the cubed potatoes and salt.

Toss gently until the potatoes are evenly coated with the spices.

Cook over medium-low heat for 10–15 minutes, turning occasionally until the potatoes become golden brown and crispy.

Garnish with chopped coriander leaves if desired.

Serve hot.
Notes & variations
Sambar Rice Rasam Rice Curd Rice Lemon Rice Tamarind Rice Chapati Dosa For extra crispiness, use potatoes that have cooled completely after boiling. Add ½ tsp freshly crushed black pepper for a pepper potato fry. Sprinkle 1 tsp roasted fennel powder for a Chettinad-style flavour. A teaspoon of ghee can be added at the end for extra richness. Leftover potato fry makes an excellent filling for dosa or sandwiches.
