South Indian Parotta

Method

In a large mixing bowl, combine the plain flour, salt and sugar.

Add the milk and mix well.

Gradually add the water and knead into a soft, slightly sticky dough.

Add 3 tablespoons of groundnut oil and continue kneading for 10β15 minutes until the dough becomes smooth, soft and elastic.

Cover the dough with oil, place it in a bowl, cover with a damp cloth or cling film and allow it to rest for at least 3 hours (or overnight in the refrigerator for best results).

Divide the dough into 10β12 equal balls.

Coat each ball lightly with oil and rest for another 15β20 minutes.

Grease the work surface generously with oil.

Stretch each dough ball into a very thin, almost transparent sheet.

Drizzle a little oil over the surface.

Fold the sheet like a fan (accordion style) into long pleats.

Roll the pleated strip into a spiral (coil), tucking the end underneath.

Rest the coils for another 10β15 minutes.

Gently flatten each coil and roll lightly into a circle about 15β18 cm (6β7 inches) wide.

Heat a tawa over medium heat.

Cook each parotta until light golden on one side.

Flip and drizzle a little groundnut oil around the edges.

Cook both sides until golden brown with crisp spots.

Remove from the tawa.

While still hot, gently clap the parotta between your palms or crush it lightly from the sides to separate the layers.
Notes & variations
Kneading the dough well is the secret to soft, flaky parottas. Resting the dough for several hours develops gluten, making it easier to stretch. Groundnut oil gives the authentic South Indian parotta flavour, but sunflower oil can also be used. Serve hot with vegetable kurma, salna, chicken curry, mutton curry or egg curry. Cooked parottas can be frozen and reheated on a hot tawa.
