South Indian Lemon Rice (Elumichai Sadam)

- water540 ml

- mustard seeds0.25 tsp
- raw peanuts1 tbsp
- green chillies2
- curry leaves1 sprig

- fresh coriander leaves1 tbsp
Method

Wash the Ponni rice thoroughly until the water runs clear.

Cook the rice with 540 ml (2¼ cups) of water until soft but with separate grains.

Transfer the cooked rice to a wide plate or tray and allow it to cool completely.

Sprinkle the lemon juice over the cooled rice and gently mix.

Heat the oil in a frying pan over medium heat.

Add the mustard seeds and allow them to splutter.

Add the peanuts and fry over low heat until golden and crisp.

Add the green chillies and curry leaves and sauté for 30 seconds.

Reduce the heat and stir in the turmeric powder.

Add the salt and mix well.

Pour the tempering over the cooled rice.

Gently mix until all the rice is evenly coated and turns a bright yellow colour.

Garnish with chopped coriander leaves before serving.

Potato Fry Vegetable Thoran Papad Coconut Chutney Pickle Curd (Yogurt) Simple Dal Always allow the rice to cool before adding the lemon juice to preserve its fresh flavour and prevent bitterness. Freshly squeezed lemon juice gives the best taste. Cashew nuts can be used instead of peanuts, or a combination of both. Add 1 teaspoon split urad dal and 1 teaspoon chana dal to the tempering for extra texture and traditional flavour. A pinch of asafoetida (hing) enhances the aroma. This rice is excellent for lunch boxes as it stays fresh for several hours. Refrigerator: Up to 2 days Best served at room temperature or lightly warmed.
