Simple Chicken Curry

- fresh coconut1 cup
- fennel seeds1 tsp

Grind the grated coconut and fennel seeds with the warm water until smooth.

Strain through a fine sieve or muslin cloth to extract 1 cup thick coconut milk. Set aside.

In a heavy-bottomed saucepan or kadai, combine:

Mix everything thoroughly using your hands so the spices coat the chicken evenly.

Pour in 375 ml (1½ cups) water.

Bring to a boil over medium heat.

Cover and cook for 15 minutes, stirring occasionally, until the chicken is nearly cooked.

Reduce the heat to low.

Pour in the prepared coconut milk.

Stir gently and simmer for 10 minutes.

Do not allow the curry to boil vigorously after adding the coconut milk to prevent it from splitting.

Sprinkle with chopped coriander leaves.

Rest the curry for 5 minutes before serving.
Notes & variations
Kerala Appam Idiyappam Malabar Parotta Chapati Ghee Rice Jeera Rice Steamed Rice Dosa Bone-in chicken gives a richer, more flavourful curry. Freshly extracted coconut milk provides the best flavour, but 250 ml canned thick coconut milk may be substituted. For a richer Kerala flavour, finish with 1 teaspoon coconut oil and a few fresh curry leaves before serving. If you prefer a thicker curry, simmer for a few extra minutes after adding the coconut milk. This curry tastes even better after resting for several hours or the next day.
