Method

    Preheat the oven to 200°C (400°F).

    Line a baking tray with baking paper.

    In a large bowl, whisk together the plain flour, sugar, baking powder, baking soda and salt.

    Add the cold butter and rub it into the flour mixture using your fingertips or a pastry cutter until the mixture resembles coarse breadcrumbs.

    In a small jug, combine the buttermilk and vanilla extract.

    Gradually add the buttermilk mixture to the dry ingredients, mixing gently until a soft dough forms. Add only enough buttermilk for the dough to come together.

    Turn the dough onto a lightly floured surface and knead gently 4–5 times. Do not overwork the dough.

    Pat the dough into a circle approximately 18 cm (7 inches) in diameter and about 2 cm thick.

    Cut out the scones using a 6.5 cm (2½-inch) round cutter.

    Arrange the scones on the prepared baking tray, leaving a small gap between each one.

    Brush the tops lightly with buttermilk or milk for a golden finish.

    Bake for 18–20 minutes, or until the scones are well risen and golden brown.

    Transfer to a wire rack and allow to cool slightly.

    Serve warm with butter, clotted cream, whipped cream, jam or preserves.

Notes & variations

Makes approximately 8–10 large coffeehouse-style scones. Keep the butter cold to produce light, flaky scones. Handle the dough as little as possible for the best texture. Add ½ cup of raisins, dried cranberries, blueberries or chocolate chips for variation. Best served warm on the day of baking. Store in an airtight container for up to 2 days or freeze for up to 3 months.
