Roasted Vegetable Winter Salad

Method

Preheat the oven to 200°C (180°C fan).

Cut the onion, butternut squash, potatoes, carrots and parsnips into chunky pieces.

Place the vegetables in a large bowl.

Add the olive oil, sea salt and black pepper.

Toss well until all the vegetables are evenly coated.

Spread the vegetables in a single layer on a baking tray.

Roast for 35–40 minutes, turning halfway through, until tender and lightly caramelised.

Meanwhile, prepare the dressing by whisking together the olive oil, balsamic vinegar, basil, coriander, parsley, salt and black pepper.

Divide the watercress or rocket between four serving bowls.

Top with the warm roasted vegetables.

Drizzle the dressing evenly over the salad.

Crumble the feta cheese over the top.

Serve immediately while the vegetables are still warm.
Notes & variations
Add roasted cauliflower, broccoli or Brussels sprouts for extra variety. Mix the salad leaves with baby spinach or kale for additional nutrients. Replace feta with goat's cheese or omit it for a vegan version. Add toasted walnuts, pecans or pumpkin seeds for extra crunch. This salad is delicious served warm or cold and is ideal for meal prep.
