  • rava1 cup
  • ghee2 tbsp
  • groundnut oil4 tbsp
  • mustard seeds1 tsp
  • split urad dal1 tsp
  • chana dal1 tsp
  • cashew nuts11
  • onion1
  • tomatoes2

  • ginger1 tsp
  • curry leaves2 sprig
  • water2 cup
  • salt1 tsp
  • sugar0.5 tsp
  • fresh coriander leaves2 tbsp
  • lemon juice1 tbsp

Method

    Dry roast the rava over medium heat for 4–5 minutes until aromatic. Do not allow it to brown. Remove and keep aside.

    Heat half the amount of oil in a heavy-bottomed pan.

    Add the mustard seeds and allow them to splutter.

    Add the urad dal and chana dal and fry until lightly golden

  5. 5

    Add the cashew nuts and fry until golden

    Add thee chopped ginger, green chillies and curry leaves. Sauté for 30 seconds.

    Add the chopped onions and cook until soft and translucent.

    Add tomatoes

    Add turmeric powder, sugar and salt.

    Add the roasted rava.

    Pour in the required hot water

    Reduce the heat to low and stirring continuously and add the quarter part of oil.

    Cover and cook on low heat for 3–4 minutes until the water is absorbed.

    Garnish with the chopped coriander leaves.

    Add the lemon juice and mix together and add the remaining oil and switch of the stove.

    Mix gently with a fork until light and fluffy.

    Serve hot with coconut chutney, sambar, pickle or a banana.

Notes & variations

The ideal water-to-rava ratio is 2½ : 1 for soft, fluffy upma. Roasting the rava beforehand prevents it from becoming sticky. A small amount of sugar enhances the flavour without making the dish sweet. Add mixed vegetables such as carrots, peas and beans for a vegetable upma. Finish with an extra drizzle of ghee just before serving for a restaurant-style taste.
