Pressure Cooker Chicken Curry

  • fresh coconut0.5 cup
  • poppy seeds0.5 tsp
  • cashew nuts or almonds6.5

  • fresh coriander leaves2 tbsp

Method

    Grind the grated coconut, poppy seeds and cashew nuts (or almonds) with a little water to make a smooth paste. Set aside.

    Heat the oil in a pressure cooker over medium heat.

    Add the curry leaves.

    Add the sliced onion and shallots and sauté until golden brown.

    Stir in the ginger garlic paste and cook until the raw smell disappears.

    Add the chopped tomatoes and cook until soft and the oil begins to separate.

    Reduce the heat to low.

    Add the turmeric powder, chilli powder, coriander powder, cumin powder, fennel powder, black pepper powder and garam masala.

    Cook for 1–2 minutes, stirring continuously.

    Add the chicken pieces and mix well until coated with the masala.

    Cook for 5 minutes, stirring occasionally.

    Add 1 cup hot water, depending on how thick you want the gravy.

    Taste and adjust the salt.

    Close the pressure cooker and cook over medium heat for 2 whistles.

    Reduce the heat to low and cook for another 5 minutes.

    Switch off the heat and allow the pressure to release naturally.

    Open the cooker and gently stir the curry.

    Stir in the prepared coconut paste.

    If the gravy is thinner than desired, simmer uncovered for 5–8 minutes until it reaches the required consistency.

    Garnish with chopped coriander leaves before serving.

Notes & variations

Steamed rice Kerala Matta rice Chapati Parotta Appam Idiyappam Dosa Bone-in chicken gives a richer and more flavourful curry. Cashew nuts produce a creamier gravy, while almonds provide a lighter alternative. Coconut paste thickens the curry naturally and adds richness. For extra heat, add 2 slit green chillies when sautéing the onions. If using country chicken (desi chicken), increase the pressure cooking time to 4 whistles, as it takes longer to become tender. This curry tastes even better after resting for 30 minutes or the next day. Refrigerator: Up to 3 days Freezer: Up to 2 months
