Potato Fry (Stovetop & Oven Method)

  • chilli powder1 tsp
  • turmeric powder0.25 tsp
  • salt0.5 tsp
  • oil1 tbsp

Method

    Wash the potatoes and boil them until ¾ cooked. (Baby potatoes may be cooked with the skin on.)

    Drain the water and allow them to cool slightly.

  3. 3

    Cut the potatoes into cubes or wedges.

  4. 4

    Heat the oil in a heavy-bottomed pan.

  5. 5

    Add the potatoes, chilli powder, turmeric powder and salt.

    Toss gently until evenly coated.

    Cook over medium heat, turning occasionally, until the potatoes are golden brown and crispy.

    Serve hot.

    Preheat the oven to 200°C.

    Cut the potatoes into wedges or cubes.

    Boil for 10 minutes.

    Drain well and allow the steam to evaporate.

    Toss with the oil, chilli powder, turmeric powder and salt.

    Spread in a single layer on a baking tray.

    Roast for 30 minutes, turning halfway through until crisp and golden.

Notes & variations

Add ½ tsp pepper powder for Pepper Potato Fry. Add 1 tsp garam masala for a spicy variation. Garnish with curry leaves fried in oil for extra flavour.
