Pizza Dough

- warm water120 ml
- active dry yeast2 tsp
- sugar1 tsp
- bread flour680 g
- kosher salt2 tsp
- olive oil1 tbsp
- water300 ml

In a small bowl, combine the warm water, yeast and sugar.

Stir gently and leave for 15β20 minutes until the mixture becomes foamy.

In a large mixing bowl, combine the bread flour and salt.

Add the olive oil, yeast mixture and the remaining water.

Mix until a rough dough forms.

Transfer the dough to a lightly floured work surface.

Knead for 5β8 minutes until the dough is smooth, soft and elastic.

Shape the dough into a ball and place it in a lightly oiled bowl.

Cover with a damp cloth or cling film and allow it to rise in a warm place until doubled in size (approximately 1Β½β2 hours).

Punch down the dough and divide it into equal portions, depending on the size of pizzas required.

Shape each portion into a smooth ball, dust lightly with flour and cover.

Allow the dough to rest for 30β45 minutes until it has increased to about 1Β½ times its original size.

Roll or stretch the dough into the desired pizza shape.

Add your preferred sauce, toppings and cheese.

Bake in a preheated oven at 240β250Β°C (or the hottest setting) for 10β15 minutes, or until the crust is golden brown and crisp.
Notes & variations
Bread flour produces a chewier pizza crust than plain flour. For best flavour, refrigerate the dough overnight after the first rise and use within 48 hours. This dough can be frozen after the first rise for up to 3 months. Allow refrigerated or frozen dough to return to room temperature before shaping. Ideal for thin crust, thick crust, calzones or garlic bread.
