Pani Puri ( Golgappa) Chutneys & Stuffing

  • roasted cumin powder0.5 tsp

  • raw mango0.25 cup

Method

    Grind the coriander leaves, mint leaves, green chillies, garlic, ginger and raw mango into a smooth paste using very little water.

    Add the lemon juice, salt, black salt and chaat masala.

    Blend again until smooth and refrigerate.

  4. 4

    Heat the groundnut oil in a saucepan.

  5. 5

    Add the cumin seeds and fennel seeds and sauté until aromatic.

    Add the tamarind, dates, jaggery and water.

    Cook for 10–12 minutes, stirring occasionally, until the raw smell disappears and the chutney thickens slightly.

    Cool, blend if required and strain for a smooth chutney.

    Combine the mashed potatoes, onion, coriander leaves, chaat masala, cumin powder, black pepper, Kashmiri chilli powder and salt.

    Mix well.

    Fold in the cooked chickpeas and chopped raw mango if using.

    Make a small hole in the top of each puri.

    Fill with the prepared potato mixture.

    Add a little green chutney.

    Add a little sweet tamarind chutney.

    Fill with chilled pani (spiced mint water), if using.

    Serve immediately before the puris become soft.

Notes & variations

The green chutney also works well as a sandwich or kebab chutney. The sweet tamarind chutney can be refrigerated for up to 2 weeks. Add boiled sprouts or white peas to the filling for extra texture. For Sev Puri or Dahi Puri, top with yoghurt, sev and extra chutneys. Assemble the pani puri just before serving to keep the shells crisp.
