No Water Mushroom Biryani

  • plain yogurt60 ml
  • green chillies2
  • mint leaves0.25 cup
  • fresh coriander leaves0.25 cup
  • chicken masala or meat masala1 tbsp
  • (Use biryani masala or mushroom masala for a vegetarian version.)
  • salt1 tsp
  • ghee2 tbsp

Method

    Wash the basmati rice until the water runs clear.

    Soak the rice in water for 30–45 minutes.

    Drain completely and set aside.

    In a large bowl, combine:

    Mushrooms

    Fried onions

    Yogurt

    Green chillies

    Mint leaves

    Coriander leaves

    Chicken masala (or biryani masala)

    Salt

    Mix gently until the mushrooms are evenly coated.

    Let the mixture rest for 15–20 minutes.

    Heat a heavy-bottomed pressure cooker over medium heat.

    Add the ghee.

    Spread the chopped tomatoes evenly over the base.

    Arrange half of the marinated mushrooms over the tomatoes.

    Spread the drained rice evenly over the mushrooms.

    Cover the rice completely with the remaining mushroom mixture.

    Close the pressure cooker.

    Cook over medium-high heat until 1 whistle.

    Reduce the heat to the lowest setting and cook for 5 minutes.

    Switch off the heat and allow the pressure to release naturally.

    Open the cooker.

    Gently fluff the biryani with a fork, mixing the mushrooms and rice without breaking the grains.

    Allow it to rest for 5 minutes before serving.

Notes & variations

Onion Raita Mint Raita Brinjal Curry Vegetable Salna Papad Pickle 400 g of mushrooms per 1 cup of rice provides sufficient moisture to cook the rice without adding water. Ensure the top layer of rice is completely covered by mushrooms to prevent the rice from drying out. Fried onions add sweetness and depth of flavour; homemade fried onions are recommended. For a richer version, add 8–10 fried cashew nuts before serving. A squeeze of lemon juice before serving enhances the flavour. This recipe works best with button mushrooms, but chestnut mushrooms or oyster mushrooms can also be used. Refrigerator: Up to 2 days Freezer: Not recommended, as mushrooms may become watery after thawing.
