Lemon Cake

Method

Preheat the oven to 180°C (160°C fan) / 350°F.

Grease and line a 20 cm (8-inch) round or loaf cake tin with baking paper.

In a bowl, sift together the plain flour, baking powder and salt.

In a separate large bowl, beat the butter and sugar until light and fluffy (about 3–5 minutes).

Add the eggs one at a time, beating well after each addition.

Mix in the vanilla extract, lemon zest and fresh lemon juice.

Fold in the flour mixture alternately with the milk, beginning and ending with the flour.

Mix gently until just combined. Do not overmix.

Pour the batter into the prepared cake tin and level the surface.

Bake for 35–40 minutes, or until a skewer inserted into the centre comes out clean.

Leave the cake in the tin for 10 minutes.

Transfer to a wire rack and allow it to cool completely.

Mix the icing sugar with the lemon juice until smooth.

Drizzle over the cooled cake.

Sprinkle with fresh lemon zest for garnish.
Notes & variations
Use fresh lemons for the best flavour. Do not overmix the batter to keep the cake light and tender. Add 1 tablespoon of poppy seeds for a Lemon Poppy Seed Cake. Serve with whipped cream, fresh berries or vanilla ice cream. Store in an airtight container for 3–4 days.
