Prepare the Ladies Finger:

Wash the ladies finger thoroughly and pat them dry with a paper towel to remove moisture (this prevents stickiness while cooking).

Chop them into small pieces and set aside.

Temper the Spices:

Heat oil in a pan over medium heat.

Add mustard seeds and let them splutter.

Add urad dal and sauté until it turns golden.

Add chopped shallots, garlic, and green chilies.

Sprinkle turmeric powder and salt. Cook uncovered on medium heat, stirring occasionally, until the ladies finger is partially cooked (about 7-8 minutes).

Cover and cook on low-medium heat for 5-7 minutes, stirring occasionally, until the tomatoes are soft and the ladies finger is fully cooked.
