Kuzhi Paniyaram (sweet)

- whole wheat flour1 cup
- plain flour1 cup
- rava0.5 cup
- jaggery2 cup
- ripe bananas3
- fresh coconut0.25 cup
- cardamom pods2.5
- water
- ghee or oil
Method

Dissolve the grated jaggery in a little warm water and strain to remove impurities.

Mash the ripe bananas until smooth.

In a large mixing bowl, combine the whole wheat flour, plain flour and rava.

Add the mashed bananas, chopped coconut and crushed cardamom.

Pour in the strained jaggery syrup.

Mix well to form a smooth, thick pouring batter. Add a little water if required.

Cover and allow the batter to rest for 6β8 hours or overnight.

Heat a kuzhi paniyaram pan over medium heat.

Grease each cavity with a little ghee or oil.

Fill each cavity about three-quarters full with the batter.

Cook for 2β3 minutes until the underside is golden brown.

Turn each paniyaram using a skewer or fork.

Cook the other side until golden brown and cooked through.

Remove and repeat with the remaining batter.

Serve warm.
Notes & variations
Ripe Kerala bananas (Nendran) or Robusta bananas produce the best flavour. Adding coconut pieces gives the traditional crunchy texture. Cook in ghee for a richer aroma and flavour. A pinch of dry ginger powder or cumin seeds can be added for extra flavour. These paniyarams stay soft for 1β2 days when stored in an airtight container.
