Kerala Fish Curry (Kudampuli Meen Curry)

- water750 ml

- kashmiri chilli powder4 tbsp
- turmeric powder1 tsp
- fenugreek seeds1 tsp
Method

Wash the kudampuli thoroughly.

Soak it in ½ cup hot water for 15 minutes.

Heat the coconut oil in a frying pan over medium heat.

Add the shallots and sauté until soft and lightly golden.

Add the chopped garlic and ginger (or ginger garlic paste) and cook until the raw smell disappears.

Reduce the heat to low and add the chilli powder and turmeric powder.

Stir continuously for 30–40 seconds until the spices are fragrant. Do not allow them to burn.

Remove from the heat and allow the mixture to cool slightly.

Grind the mixture into a smooth paste using a little water.

Transfer the ground masala paste to a clay pot (manchatti) or heavy-bottomed saucepan.

Add the reserved kudampuli

Pour in the remaining water.

Add the slit green chillies, curry leaves and salt.

Bring the curry to a gentle boil and simmer for 8–10 minutes, allowing the raw flavour of the spices to cook out.

Gently place the fish pieces into the simmering curry.

Cook over low heat for 8–10 minutes, or until the fish is cooked through.

Swirl the pot occasionally instead of stirring with a spoon to avoid breaking the fish.

Heat a small pan and dry roast the fenugreek seeds for 30 seconds, or temper them in a teaspoon of coconut oil until lightly golden.

Add the fenugreek seeds to the curry.

Add a few fresh curry leaves and simmer for another 2 minutes.

Remove from the heat and allow the curry to rest for 20–30 minutes before serving. This helps the flavours develop.

Kerala Matta Rice Steamed white rice Kappa (Tapioca) Appam Idiyappam Puttu A clay pot (manchatti) gives the most authentic Kerala flavour and improves the taste over time. Kudampuli (Malabar tamarind) gives this curry its characteristic smoky, tangy flavour and should not be substituted with regular tamarind if authenticity is desired. Kashmiri chilli powder provides a vibrant colour with moderate heat. For a spicier curry, replace part of it with regular hot chilli powder. This curry is traditionally not stirred with a spoon after the fish is added; gently swirl the pot instead. Kerala fish curry is best enjoyed the next day, as the flavours continue to mature. Refrigerator: Up to 3 days Freezer: Not recommended, as the fish texture may deteriorate.
