Kerala Beef Ularthiyathu (Kerala Beef Fry)

Method

Heat a small dry frying pan over low heat.

Add the cumin, fennel, cardamom, cloves, star anise, cinnamon and black peppercorns.

Dry roast for 2–3 minutes, stirring continuously until fragrant.

Allow the spices to cool completely.

Grind to a slightly coarse powder and set aside.

In a bowl combine:

Transfer to a pressure cooker.

Cook for 4 whistles over medium heat.

Allow the pressure to release naturally.

Reserve all the cooking liquid.

Heat the coconut oil in a heavy-bottomed kadai.

Add the mustard seeds.

Once they splutter, add the cumin seeds.

Add the remaining curry leaves.

Add the coconut slivers.

Fry until they begin to turn light golden.

Add the remaining sliced onions.

Sauté until deep golden brown.

Add the ginger garlic paste.

Cook until the raw smell disappears.

Add the cooked beef together with all its cooking liquid.

Cook over medium-high heat, stirring occasionally.

Continue cooking until almost all the moisture has evaporated.

Stir in the vinegar.

Roast the beef for 15–20 minutes, stirring frequently.

the beef becomes dark brown,

If the pan becomes dry before the beef is well roasted, drizzle in 1 tablespoon coconut oil.

Scrape the caramelised bits from the sides and bottom of the pan back into the beef for maximum flavour.
Notes & variations
Kerala Matta Rice Appam Idiyappam Parotta Chapati Ghee Rice Kappa (Tapioca) Thenga Kothu (coconut slivers) is one of the signature ingredients of authentic Kerala Beef Ularthiyathu. Fresh coconut slivers are preferred. If unavailable, roast ¼ cup frozen grated coconut until golden brown and stir it into the beef during the final roasting stage. Coconut oil is essential for the authentic Kerala flavour. Slow roasting after pressure cooking develops the rich dark colour and intense flavour characteristic of this dish. Beef chuck, brisket or stewing beef are excellent choices as they become tender after pressure cooking. For extra heat, add 1 teaspoon coarsely crushed black pepper during the final roasting stage.
