Kaju Katli ( Cashew Burfi)

- cashew nuts200 g
- sugar200 g
- water60 ml
- ghee2 tbsp
Method

Grease a plate, tray or parchment paper with a little ghee and set aside.

Grind the cashew nuts into a fine powder. Pulse in short bursts to avoid releasing oil from the nuts.

Place the sugar and water into a 2-litre pressure cooker.

Close the lid and cook for 3 whistles (approximately 3 minutes 45 seconds) using the OPOS sugar syrup method.

Allow the pressure to release naturally.

Pour the hot sugar syrup over the cashew powder.

Mix immediately using a spatula until it comes together.

Add 1 tablespoon of ghee and continue mixing until a soft dough forms.

Transfer the mixture onto a greased work surface or parchment paper.

While still warm, knead gently until smooth.

Roll the dough to approximately 3โ5 mm thickness using a greased rolling pin.

Allow it to cool for 5โ10 minutes.

Cut into diamond or square shapes using a sharp knife or cookie cutter.

Separate the pieces once completely cooled.
Notes & variations
Use only room-temperature cashews for grinding. Do not over-grind the cashews, as they may release oil and become a paste. The mixture should be rolled while still warm for a smooth finish. Edible silver leaf (varak) can be applied before cutting for a traditional presentation. Store in an airtight container at room temperature for up to 7 days or refrigerate for up to 2 weeks.
