Kadai Prawns

  • cumin seeds2 tsp
  • black peppercorns8
  • turmeric powder0.25 tsp
  • garam masala powder0.5 tsp

Method

    Dry roast the dried red chillies, coriander seeds, cumin seeds and black peppercorns over medium heat for 2–3 minutes until aromatic.

    Allow the spices to cool completely.

    Coarsely grind the roasted spices and set aside.

    Heat the oil in a heavy-bottomed kadai over medium heat.

    Add the ginger strips and green chillies. Sauté for 30 seconds.

    Add the chopped onions and cook until they become light golden brown.

  7. 7

    Add the chopped tomatoes and tomato puree.

    Cook until the tomatoes soften and the oil begins to separate.

    Add the turmeric powder and salt. Mix well.

    Stir in half of the chopped coriander leaves.

    Add the freshly ground kadai spice mix and cook for 1–2 minutes, stirring continuously.

    Add the cleaned prawns and gently mix until well coated with the masala.

    Cover and cook over medium heat for 5–7 minutes, or until the prawns are just cooked through.

    Stir occasionally, taking care not to overcook the prawns.

    Sprinkle the garam masala over the curry.

    Mix gently and cook for another 1 minute.

    Garnish with the remaining chopped coriander leaves and the reserved ginger strips.

Notes & variations

Naan Roti Chapati Jeera Rice Ghee Rice Steamed Basmati Rice Use large king prawns for the best flavour and presentation. Freshly roasted and coarsely ground spices give the dish its signature kadai flavour. Do not overcook the prawns—they become tough and rubbery if cooked for too long. For a richer gravy, stir in 2 tablespoons of fresh cream just before serving. Add diced red and green capsicum after the onions for a restaurant-style Kadai Prawn. Refrigerator: Up to 2 days Freezer: Not recommended after cooking.
