- basmati rice600 g
- coconut milk500 ml
- water
- ghee2 tbsp
- bay leaves2
- cinnamon sticks2
- cloves5
- cumin seeds1 tbsp
- green chillies2
- salt2 tsp
- fresh coriander leaves0.25 cup
Method

Wash and soak the rice for 30 minutes, then drain.

Pour in the coconut milk and water.

Add the salt and bring to a gentle boil.

Add the washed and soaked the rice.

Cover with a tight-fitting lid and cook over low heat for 12β15 minutes until the rice is tender.

Switch off the heat and let the rice rest, covered, for 10 minutes.

Fluff gently with a fork.

Heat the ghee in a heavy-bottomed saucepan.

Add the bay leaves, cinnamon, cloves and cumin seeds.

Once fragrant, add the green chillies.

Add the cooked rice and sautΓ© gently for 2 minutes.

Garnish with coriander leaves
