Idiyappam(String Hoppers)

- roasted idiyappam flour2 cup
- salt0.25 tsp
- oil2 tsp
- hot water
- oil or coconut
Method

In a large mixing bowl, combine the roasted rice flour and salt.

Add the oil and mix well.

Gradually pour in the hot water while stirring with a spoon until the mixture comes together.

Once cool enough to handle, knead into a soft, smooth dough. The dough should be soft but not sticky.

Grease the idiyappam press lightly with oil.

Fill the press with the warm dough.

Lightly grease the idiyappam moulds or steamer plates. If desired, sprinkle a little grated coconut over the moulds.

Press the dough in circular motions to form thin nests on the moulds.

Steam the idiyappams in a steamer or idli cooker for 10β12 minutes, or until cooked.

Remove from the steamer and allow to cool for 2 minutes before lifting them off gently.

Serve hot with vegetable stew, egg curry, chicken curry, coconut milk, sweetened coconut or kurma.
Notes & variations
Use freshly roasted idiyappam flour for the softest texture. The water should be very hot when mixing the dough. Keep the dough covered while working to prevent it from drying out. If the dough cracks while pressing, sprinkle a little more hot water and knead again. Leftover idiyappams can be reheated by steaming for 2β3 minutes.
