Homemade Tamarind Paste (OPOS Method)

Place the cleaned tamarind into a 2-litre pressure cooker.

Add the 2 cups of water.

Close the cooker with the weight attached.

Cook on high heat for 4 whistles.

Allow the pressure to release naturally.

Mash the softened tamarind thoroughly using a spoon or potato masher.

Strain through a sieve if a smooth paste is preferred.

Allow to cool completely.

Store in a clean, sterilised glass jar in the refrigerator.
Notes & variations
The remaining tamarind fibre can be boiled with 1 cup of water and used to make rasam. Refrigerated tamarind paste keeps well for 2โ3 months. Freeze in ice cube trays for convenient portion sizes. Always use a clean, dry spoon to prevent spoilage.
