Homemade Channa Masala Powder

- fennel seeds1 tsp
- cumin seeds1 tsp
- black peppercorns1 tsp
- green cardamom2
- star anise1
- cloves2
- cinnamon stick1
- bay leaf1
- turmeric powder1 tsp
- amchur powder1 tbsp
Method

Clean all the whole spices.

Dry roast the red chillies, coriander seeds, fennel seeds, cumin seeds, black pepper, cardamom, star anise, cloves, cinnamon and bay leaf over low heat until aromatic.

Allow the spices to cool completely.

Grind the roasted spices into a fine powder.

Stir in the turmeric powder and amchur powder.

Mix well and store in a clean, dry, airtight container.
Notes & variations
Use 2โ3 teaspoons for 500 g cooked chickpeas. Also suitable for chole, chickpea curry, rajma and vegetable curries. Amchur provides the characteristic tangy flavour. If unavailable, add lemon juice while cooking instead. Roasting over low heat preserves the flavour of the spices. Store in an airtight container for up to 6 months.
