Gulab Jamum ( using Ready Mix)

  • gulab jamun ready mix200 g
  • milk95 ml
  • ghee or oil
  • sugar400 g
  • water500 ml
  • cardamom powder0.5 tsp
  • rose water1 tsp
  • lemon juice0.5 tsp

Method

    Combine the sugar and water in a saucepan.

    Bring to a boil, stirring until the sugar dissolves completely.

    Add the cardamom powder.

    Simmer for 5–7 minutes until the syrup becomes slightly sticky. Do not allow it to reach one-string consistency.

    Add the lemon juice to prevent crystallisation.

    Stir in the rose water, if using.

    Keep the syrup warm over very low heat.

    Place the ready mix in a mixing bowl.

    Gradually add the milk and gently mix to form a soft dough. Do not over-knead.

    Cover and allow the dough to rest for 10 minutes.

    Grease your palms with a little ghee.

    Divide the dough into 18–20 equal portions.

    Roll each portion into a smooth ball without any cracks.

    Heat the ghee or oil over low to medium heat (approximately 140–150°C).

    Add the jamuns in small batches.

    Fry gently, stirring continuously, until evenly golden brown on all sides (6–8 minutes).

    Remove with a slotted spoon and drain briefly.

    Immediately transfer the warm gulab jamuns into the warm sugar syrup.

    Allow them to soak for at least 2 hours before serving.

    Serve warm or chilled.

Notes & variations

The dough should be soft but not sticky. Always fry on low to medium heat to ensure the jamuns cook evenly inside. The sugar syrup should be warm, not boiling, when adding the fried jamuns. Garnish with chopped pistachios, almonds or dried rose petals. Serve with vanilla ice cream for a delicious dessert. Store refrigerated for up to 5 days.
