Curry Leaf Chicken

Method

    Heat 1 teaspoon oil in a small pan.

    Add the shallots, garlic and ginger and sauté for 2–3 minutes.

    Add the green chillies, curry leaves, mint leaves and cashew nuts.

  4. 4

    Cook for another 2–3 minutes until the leaves wilt.

  5. 5

    Allow the mixture to cool slightly.

    Grind to a smooth paste using very little water.

    Heat 2 tablespoons oil in a heavy-bottomed pan over medium-high heat.

    Add the chicken pieces and salt.

    Fry for 5–6 minutes, stirring occasionally, until the chicken is lightly browned.

    Add the prepared green masala paste.

    Mix well to coat the chicken evenly.

    Cook for 5 minutes, stirring frequently until the raw aroma disappears.

    Pour in 120 ml (½ cup) water.

    Cover with a lid and cook over medium heat for 5–7 minutes, or until the chicken is fully cooked.

    Remove the lid and increase the heat.

    Cook until the gravy thickens and coats the chicken.

    Add the sliced onions and fresh curry leaves.

    Stir-fry for 2–3 minutes until the onions are slightly softened but still retain a little crunch.

    Taste and adjust the salt if required.

Notes & variations

Steamed rice Ghee rice Jeera rice Chapati Parotta Dosa Appam Idiyappam Boneless chicken thighs give the juiciest result, but curry-cut chicken with bone also works well. Cashew nuts add body and richness to the gravy without using coconut. For a spicier version, add ½ teaspoon black pepper powder while frying the chicken. Finish with 1 teaspoon coconut oil for a traditional Kerala-style aroma. Avoid overcooking the curry leaves to preserve their vibrant green colour and fresh flavour.
