Coconut Cupcakes with Cream Cheese Frosting

In a large mixing bowl, beat the butter and sugar together for 5 minutes until pale and fluffy.

Notes & variations
Toast the coconut before decorating for a richer nutty flavour. Almond extract can be omitted if preferred. For extra moist cupcakes, replace 60 ml buttermilk with 60 ml coconut milk.
