Coconut Cupcakes with Cream Cheese Frosting

    Eggs - 5 large, room temperature

    Almond extract - 1½ tsp

    Plain (all-purpose) flour - 375 g

    Baking powder - 1 tsp

    Baking soda - ½ tsp

    Salt - ½ tsp

    Buttermilk - 240 ml

    Sweetened shredded coconut - 400 g

    200 g folded into the batter

    200 g for decorating

    Full-fat cream cheese, softened - 450 g

    Unsalted butter, softened - 340 g

    Vanilla extract - 1 tsp

    Almond extract - ½ tsp

    Icing sugar (powdered sugar), sifted - 680 g

    Two 12-hole muffin trays

    18–20 cupcake liners

    Preheat the oven to 160°C fan or 170°C conventional (325°F).

    Line two muffin trays with paper cupcake liners.

    In a large mixing bowl, beat the butter and sugar together for 5 minutes until pale and fluffy.

    Add the eggs one at a time, beating well after each addition.

    Mix in:

    Almond extract

    Add one-third of the flour mixture.

    Mix gently.

    Add half the buttermilk.

    Continue alternating the flour and buttermilk, finishing with the flour.

    Mix only until combined.

    Fold in 200 g shredded coconut.

    Fill each cupcake liner almost to the top.

    Bake for 25–35 minutes, or until:

    and a skewer inserted into the centre comes out clean.

    Leave the cupcakes in the pan for 15 minutes.

    Transfer to a wire rack and cool completely before frosting.

    Beat together:

    Cream cheese

    until smooth and creamy.

    Gradually beat in the sifted icing sugar.

    Continue beating until light, fluffy and smooth.

    Pipe or spread the frosting over the cooled cupcakes.

    Sprinkle generously with the remaining 200 g shredded coconut.

Notes & variations

Toast the coconut before decorating for a richer nutty flavour. Almond extract can be omitted if preferred. For extra moist cupcakes, replace 60 ml buttermilk with 60 ml coconut milk. Add lemon or lime zest to the frosting for a citrus twist. These cupcakes are ideal for birthdays, afternoon tea and celebrations.
