Classic Blueberry Pie

In a food processor combine the flour, salt and sugar.

Pulse briefly until mixed.

Add the chilled butter.

Process for 10–15 seconds until the mixture resembles coarse breadcrumbs.

Add 60 ml ice-cold water.

Pulse until the dough just begins to come together.

If necessary, add an extra 1–2 tablespoons of water.

Turn the dough onto a lightly floured surface.

Bring it together without kneading.

Divide into 2 equal portions (approximately 330 g each).

Flatten into discs.

Wrap each in cling film.

Roll one disc into a 30 cm circle.

Notes & variations
Fresh blueberries provide the best texture, but frozen blueberries can also be used without thawing. Chilling the pastry before baking helps prevent shrinkage. The lemon zest enhances the blueberry flavour without making the pie taste lemony. The decorative pastry stars can be replaced with a full pastry lid or lattice top. For extra shine, brush the baked pie lightly with warm apricot jam. -
