Classic Beef & Pork Lasagne

Method

Place the milk, sliced onion, bay leaves and cloves into a saucepan.

Bring just to a gentle boil.

Remove from the heat and allow to infuse for 1 hour.

Strain the milk and discard the onion and spices.

Melt the butter in the saucepan.

Add the flour and cook for 2 minutes, stirring continuously.

Gradually whisk in the infused milk until smooth.

Simmer gently until thickened.

Season with salt, pepper and freshly grated nutmeg.

Set aside.

Heat the olive oil in a large heavy-bottomed saucepan.

Add the celery, onion, carrot, garlic and pancetta.

Cook gently until the vegetables soften without colouring.

Add the beef mince and pork mince.

Pour in the milk.

Break up the meat with a wooden spoon and cook until no longer pink.

Add the chopped tomatoes.

Stir in the bay leaves, rosemary, thyme, oregano, beef stock cubes and red wine.

Bring to a gentle simmer.

Cover and cook for 1 hour, stirring occasionally.

Remove the lid and simmer for another 30–60 minutes until rich and thick.

Remove the herb stalks and bay leaves.

Taste and adjust the seasoning.

Preheat the oven to 180°C (160°C fan) / Gas Mark 4.

Spread a thin layer of meat sauce over the base of a 3.5-litre baking dish.

Cover with a layer of lasagne sheets.

Spread a layer of béchamel sauce.

Substitute all the pork with beef for a classic beef lasagne. Add a layer of sautéed spinach for extra vegetables. Mozzarella can be added between the layers for a cheesier lasagne. Leftovers keep well in the refrigerator for 3–4 days and freeze beautifully for up to 3 months. Allow frozen lasagne to thaw overnight before reheating.
