Chettinad Meen Puttu (Fish Scramble with Tinned Fish)

Drain the tinned fish thoroughly.

Remove any skin or large bones if present.

Flake the fish into small pieces using a fork.

Heat the gingelly oil in a heavy-bottomed frying pan over medium heat.

Add the chopped onions and sauté until soft and lightly golden.

Add the grated ginger, chopped green chillies and curry leaves.

Sauté for 2–3 minutes until fragrant.

Stir in the coriander powder, chilli powder and turmeric powder.

Cook for 1 minute, ensuring the spices do not burn.

Add the flaked fish and sprinkle in the salt.

Gently mix until the fish is evenly coated with the spices.

Cook over low heat for 5–7 minutes, stirring occasionally.

Add the grated coconut and chopped coriander leaves.

Mix gently and cook for another 2 minutes.

If using the optional tempering, heat 1 teaspoon oil in a small pan, add the mustard seeds, urad dal, dried red chilli and curry leaves. Pour over the fish and mix gently.

Fish packed in spring water gives the cleanest flavour. If using fish in brine, reduce the added salt. A squeeze of fresh lemon juice before serving enhances the flavour. For extra heat, add freshly ground black pepper or an additional green chilli. Avoid over-stirring to keep the fish light and flaky. Refrigerator: Up to 2 days Not recommended for freezing after preparation.
