Chettinad Kozhi Rasam (Chicken Soup)

- shallots1 cup

- hot chicken stock or hot water750 ml

Method

Place the chopped onion, dried red chilli, garlic, fennel seeds and curry leaves in a blender.

Grind into a coarse paste without adding too much water.

Heat the oil in a heavy-bottomed saucepan or pressure cooker over medium heat.

Add the chopped shallots and sauté until soft and lightly golden.

Add the chopped tomato and cook until soft and pulpy.

Stir in the ground masala paste and cook for 3–4 minutes until the raw smell disappears.

Add the chicken pieces and mix well to coat them with the masala.

Add the coriander powder, chilli powder, cumin powder, turmeric powder and salt.

Cook for 3–4 minutes, stirring occasionally.

Pour in 250 ml water and bring to a boil.

Cover and cook over low heat for 20–25 minutes, or until the chicken is fully cooked and tender.

Alternatively, pressure cook for 3 whistles and allow the pressure to release naturally.

Pour in the 750 ml hot chicken stock (or hot water).

Simmer gently for 8–10 minutes to allow the flavours to combine.

Taste and adjust the seasoning.

Strain the soup if you prefer a clear rasam, or serve it with the chicken pieces for a heartier soup.

Garnish with freshly chopped coriander leaves.
Notes & variations
Serve hot as an appetiser. Enjoy with steamed rice. Serve alongside idiyappam or appam. Accompany with crusty bread for a light meal. Bone-in country chicken (desi chicken) gives the richest flavour. Homemade chicken stock enhances the taste significantly. For a spicier soup, add extra black pepper or another dried red chilli. A squeeze of fresh lemon juice just before serving brightens the flavour. Store in the refrigerator for up to 3 days or freeze for up to 3 months.
