Method

    Heat a dry pan over medium heat.

    Roast the coriander seeds, fennel seeds, cumin seeds, peppercorns, whole garam masala and kalpasi until aromatic.

    Add the dried red chillies and roast for another minute.

    Finally, add the grated coconut and roast until it turns golden brown.

    Allow the mixture to cool completely.

    Grind with a little water to a smooth, thick paste.

    Heat the gingelly oil in a heavy-bottomed kadai or saucepan.

    Add the curry leaves.

    Add the sliced onions and sauté until golden brown.

    Add the ginger garlic paste and cook until the raw smell disappears.

    Add the chopped tomatoes and cook until soft and the oil separates.

    Stir in the turmeric powder, chilli powder and coriander powder.

    Cook the spices for 2 minutes.

    Add the chicken pieces and mix well so they are coated with the masala.

    Cover and cook for 8–10 minutes, allowing the chicken to release its juices.

    Add the prepared Chettinad masala paste.

    Pour in 1–1½ cups water, depending on the desired consistency.

    Add salt to taste and mix well.

    Cover and simmer over low heat for 20–25 minutes, or until the chicken is tender and the gravy thickens.

    Garnish with chopped coriander leaves.

Notes & variations

Steamed rice Idiyappam Appam Dosa Parotta Chapati Kal Dosa Gingelly (sesame) oil is essential for authentic Chettinad flavour. Kalpasi (Black Stone Flower) gives the curry its distinctive earthy aroma and is a signature ingredient in Chettinad cuisine. Bone-in chicken produces a richer and more flavourful gravy. Roast the coconut until golden, not dark brown, to avoid bitterness. This curry tastes even better after resting for a few hours or overnight as the spices continue to develop. For a thicker restaurant-style gravy, reduce the sauce for a few extra minutes before serving.
