Chappathi ( Soft Indian Flat bread)

- oil or ghee1 tsp

Method

In a large mixing bowl, combine the whole wheat flour and salt.

Gradually add the warm water while mixing until a soft dough forms.

Knead the dough for 8โ10 minutes until it becomes smooth, soft and elastic.

Add the oil or ghee (if using) and knead for another minute.

Cover the dough with a damp cloth or cling film and allow it to rest for 20โ30 minutes.

Divide the dough into 10 equal portions and roll each into a smooth ball.

Lightly dust the work surface with flour.

Roll each ball into a thin circle approximately 18โ20 cm (7โ8 inches) in diameter.

Heat a tawa or flat griddle over medium-high heat.

Place one chapati on the hot tawa and cook until small bubbles appear (about 30โ40 seconds).

Flip and cook the other side for about 30 seconds.

Flip once more and gently press the edges with a clean cloth or spatula until the chapati puffs up.

Remove from the tawa and brush lightly with ghee if desired.

Keep the cooked chapatis covered in a clean kitchen towel to keep them soft.

Serve warm with curry, dal or vegetables.
Notes & variations
Resting the dough is essential for easy rolling and soft texture. Do not use too much dry flour while rolling, as it can make the chapatis dry. Chapatis can be stored in an insulated casserole or wrapped in foil to keep them soft. Freeze cooked chapatis for up to 2 months. Reheat directly on a hot tawa.
