Butter Paneer ( Paneer Makhani )

Method

    Heat the oil in a heavy-bottomed pan over medium heat.

    Add the cumin seeds, bay leaf, black peppercorns, cinnamon, cloves, mace and coriander seeds. Sauté until fragrant.

    Add the chopped tomatoes and a little salt.

  4. 4

    Cover and cook for 5–8 minutes until the tomatoes become soft.

    Allow the mixture to cool slightly, then blend into a smooth puree.

    Heat the butter in the same pan.

    Add the ginger garlic paste and sauté until the raw smell disappears.

    Pour in the tomato puree.

    Add the Degi mirch powder and cook over medium heat until the butter begins to separate from the masala.

    Add the water and adjust the consistency as desired.

    Add the salt, sugar and crushed kasuri methi.

    Simmer for 5 minutes.

    Add the paneer cubes and gently mix.

    Cover and cook for 5 minutes on low heat.

    Stir in the fresh cream and simmer for 1 minute. Do not boil after adding the cream.

    Switch off the heat and serve hot.

Notes & variations

Soak the paneer in warm water for 10 minutes before adding it to the gravy to keep it soft. For a richer restaurant-style flavour, add an extra tablespoon of butter before serving. Cashew nuts (10–12), cooked with the tomatoes and blended into the puree, create a creamier gravy. Adjust the sweetness to balance the acidity of the tomatoes. Serve with naan, butter naan, laccha paratha, roti, jeera rice or pulao.
