Butter Naan/Garlic Naan

- lukewarm milk0.25 cup
- warm water
- instant dry yeast1 tsp
- sugar1 tsp
- salt1 tsp
- oil1 tbsp
- butter
- butter4 tbsp
- garlic3 clove
- fresh coriander leaves2 tbsp
Method

Warm the milk to 42β43Β°C (105β110Β°F).

Add the sugar and stir until dissolved.

Add the yeast and mix gently.

Allow it to stand for 5β10 minutes until frothy.

In a large bowl, combine the plain flour and salt.

Add the oil and activated yeast mixture.

Gradually add the warm water and mix to form a soft, slightly sticky dough.

Knead for 8β10 minutes until smooth and elastic.

Lightly oil the dough and the bowl.

Cover with a damp cloth or cling film.

Allow the dough to rise for 1β1Β½ hours, or until doubled in size.

If using the yoghurt method (without yeast), rest the dough for 2 hours.

Divide the dough into 8 equal portions.

Roll each portion into a ball.

Dust lightly with flour.

Roll or stretch into an oval or teardrop shape about 5 mm thick.

Mix the melted butter, chopped garlic and coriander leaves.

Brush this mixture over the rolled naan and gently press it into the dough.

Heat a cast-iron tawa until very hot.

Lightly wet one side of the naan with water.

Place the wet side down on the hot tawa so it sticks to the surface.

Cook until bubbles appear on the surface.

Turn the tawa upside down over an open flame (or grill the top using a kitchen torch or oven grill) until charred spots appear.

Remove carefully using a spatula.

Brush generously with melted butter while still hot.

Preheat the oven to its highest temperature (250β290Β°C if possible).

Bake the naan for 6β7 minutes until puffed and lightly browned.

Brush immediately with melted butter.
Notes & variations
The tawa method gives the closest result to traditional tandoor naan and is recommended. The dough should remain soft and slightly sticky for fluffy naan. Add nigella (kalonji) seeds or sesame seeds before cooking for extra flavour. For cheese naan, add grated mozzarella or cheddar before folding the dough. Serve hot with butter chicken, paneer butter masala, dal makhani, chicken tikka masala or kurma.
