Butter biscuits ( Cornflour version)

- unsalted butter180 g
- icing sugar30 g
- vanilla essence1 tsp
- plain flour130 g
- cornflour100 g
- salt1 pinch
- extra icing sugar

Preheat the oven to 160°C.

Line a baking tray with baking paper.

Place the softened butter and icing sugar into a mixing bowl.

Beat on medium speed for 1 minute, then increase to high speed until light and fluffy.

Add the salt and vanilla essence and mix well.

Add the plain flour followed by the cornflour.

Mix until a soft dough forms.

Wrap the dough and refrigerate for at least 2 hours.

Roll the dough to approximately 5 mm (½ cm) thickness.

Cut into desired shapes using a biscuit cutter.

Arrange the biscuits on the prepared baking tray, leaving a small gap between each biscuit.

Bake for 15 minutes or until the edges are lightly golden.

Cool on the tray for 5 minutes before transferring to a wire rack.

Dust lightly with icing sugar while still warm, if desired.
Notes & variations
The dough must be well chilled for easier rolling. Do not overbake; the biscuits should remain pale with lightly golden edges. Store in an airtight container for up to 2 weeks.
