- butter180 g
- soft butter175 g
- caster sugar200 g

Method

Once the sugar is well mixed with the butter, add the salt and the vanilla essence

Mix the butter and sugar in a large bowl. Mix until smooth and light cream in colour

Break 2 eggs into a small bowl and beat lightly. Mix in a teaspoon of vanilla extract
- 4
Now gradually add the flour mixture to the butter mixture. Mix thoroughly until you can no longer see any lumps of white flour. It will turn into a dough.

Split into two equal pieces, flatten slightly and cover with cling film. Place in the fridge for about 30 minutes. This will make it easier to roll out.
