Boiled Fruit Cake:

Preheat the oven to 170°C (340°F).

Grease and line a 20 cm (8-inch) round or square cake tin with baking paper.

In a large saucepan, combine the brown sugar, hot water, butter, cinnamon, cloves, ginger and salt.

Add the raisins and bring the mixture to a gentle boil.

Reduce the heat and simmer for 5 minutes.

Remove from the heat and allow the mixture to cool to room temperature.

Stir in the lightly beaten eggs and vanilla extract.

Sift together the plain flour and baking soda.

Fold the flour mixture into the cooled fruit mixture until just combined.

Add the chopped mixed peel and mix evenly.

Pour the batter into the prepared cake tin and level the surface.

Bake for 60–75 minutes, or until a skewer inserted into the centre comes out clean.

Allow the cake to cool in the tin for 15 minutes.

Transfer to a wire rack and cool completely before slicing.
Notes & variations
This cake develops a richer flavour after 1–2 days. Add 100 g chopped walnuts or pecans for extra texture. Mixed dried fruit can be used instead of raisins. Wrap the cooled cake in baking paper and foil to keep it moist. Store in an airtight container for up to 1 week or freeze for up to 3 months.
