Birthday Chocolate Cake

  • buttermilk250 ml

  • cocoa powder2 tsp
  • unsalted butter3 tbsp
  • boiling water1.5 tbsp
  • two 22 cm round cake tins or
  • three 18 cm round cake tins

Method

    Preheat the oven to 180Β°C (160Β°C fan).

    Grease the cake tins and line the bases with baking paper.

    In a large mixing bowl, beat the softened butter and caster sugar together until pale and fluffy.

    Add the eggs one at a time, beating well after each addition.

    Sift together:

    Plain flour

    Cocoa powder

    Baking powder

    Bicarbonate of soda

    Gradually fold the dry ingredients into the butter mixture.

    Add the buttermilk and vanilla extract.

    Mix until a smooth batter forms.

    Divide the batter evenly between the prepared cake tins.

    Bake for 19–25 minutes, or until:

    the cake springs back when lightly pressed,

    and a skewer inserted into the centre comes out clean.

    Leave the cakes in their tins for 5 minutes.

    Turn out onto a wire rack and cool completely.

    Sift together the icing sugar and cocoa powder.

    Stir in the melted butter.

    Gradually add 1–2 tablespoons boiling water, mixing until the icing becomes smooth and spreadable.

    Place one cake layer on a serving plate.

    Spread a layer of chocolate icing over the top.

    Place the second cake layer on top.

    Cover the top and sides with the remaining icing.

Notes & variations

If buttermilk is unavailable, mix 250 ml milk with 1 tablespoon lemon juice and leave for 10 minutes before using. Add 100 g chocolate chips to the batter for extra richness. For a richer frosting, replace the icing with chocolate buttercream or chocolate ganache. The cake layers can be baked a day in advance and wrapped well before icing. This recipe also makes approximately 18–20 cupcakes, baked for 18–20 minutes.
