Baked Feta Tomato Pasta ( TikTok Pasta)

  • lemon zest1 tsp

Method

    Preheat the oven to 200°C (400°F).

    In a large oven-safe baking dish or cast-iron skillet, combine the cherry tomatoes, minced garlic and most of the olive oil.

    Season with the sea salt, black pepper and red pepper flakes.

    Toss everything together.

    Place the block of feta cheese in the centre of the tomatoes.

    Drizzle the remaining olive oil over the feta.

    Scatter the thyme over the tomatoes, if using.

    Bake for 40–45 minutes, or until the tomatoes burst and the feta becomes soft and lightly golden.

Notes & variations

Meanwhile, cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve ½ cup of the pasta cooking water before draining. Remove the baking dish from the oven. Mash the baked feta and tomatoes together with a spoon until creamy. Add the cooked pasta and reserved pasta water. Stir well until the pasta is evenly coated with the creamy sauce. Stir in the chopped fresh basil. Add the lemon zest, if using. Taste and adjust the seasoning if required. Stir in baby spinach immediately after baking—the residual heat will wilt it perfectly. Kalamata olives, sun-dried tomatoes or roasted peppers make excellent additions. For a spicier version, increase the red pepper flakes. Leftovers can be refrigerated for up to 3 days and reheated with a splash of milk or reserved pasta water.
