Badusha

- plain curd0.5 cup
- bicarbonate of soda0.5 tsp

Method

Whisk the softened butter and curd together until smooth and creamy.

In a separate bowl, combine the plain flour, sugar and bicarbonate of soda.

Add the flour mixture to the butter mixture and mix until it resembles coarse crumbs.

Gradually add the water and bring the mixture together into a soft dough. Do not over-knead.

Cover the dough and allow it to rest for 30 minutes.

Divide the dough into approximately 50 equal portions.

Roll each portion into a smooth ball and gently flatten the centre.

Heat oil over low to medium heat.

Fry the badusha in small batches until golden brown and cooked evenly on both sides.

Remove and drain on kitchen paper.

Prepare the sugar syrup by combining the sugar, water, cardamom powder and saffron in a saucepan or pressure cooker.

Cook until the syrup reaches a one-string consistency.

Alternatively, use the OPOS method by pressure cooking the sugar and water for 3 whistles (or Steam function for 1 minute in an Instant Pot).

Allow the syrup to cool slightly until warm.

Dip each fried badusha into the warm syrup for 1β2 minutes, turning once to coat evenly.

Remove and place on a wire rack.

Allow the sugar coating to dry completely before storing.
Notes & variations
Makes approximately 50 small badusha. Fry over low to medium heat to ensure the inside cooks evenly. The sugar syrup should be warm, not boiling, when coating the badusha. Store in an airtight container for up to one week. Garnish with chopped pistachios or silver leaf for festive occasions.
